Salmon a la Mustarde

A little recipe. Salmon was on sale cheap at the local discount grocery store. We bought some filets and prepared them thusly:

Salmon filets, around 1 pound
1 T mustard
Tinfoil: 2x1 foot
Salt
Pepper

Coat salmon in salt, pepper, and mustard. Wrap salmon in aluminum foil, sealed carefully. Place foil wrapped salmon on cookie sheet and place in oven at 350'F for 25 minutes. This is important because farmed salmon has parasites in it, and cooking thoroughly kills them all.

Serve with white rice, peas or cut green beans, and green salad. White wine is preferred for fish, though a Rose would be alright. So would a Pinot Grigio or Sauvignon Blanc or Chenin Blanc, served cold enough. I had iced tea with mine.
